Chocolate Chip Pancakes!

Just thought I'd jot down that I made Pancakes last night [recipe]. First batch I mixed in some cinnamon and the 2nd batch I mixed in chocolate chips! Lincoln even ate a couple!

First "fried" Chinese food dish


I'm not sure if this is a good (healthy) thing but cooked up my first "fried" Chinese food dish last night [http://tinyurl.com/y8bfzno]. Was great! For the record books I had some substitutions:
  • I had no rice wine or rice vinegar so I used a few tablespoons of apple juice instead
  • I also had no dried red pepper pods so I just threw in a couple teaspoons of crushed red pepper.
Also... I almost died from boiling oil splatter. That is all.

Dinner: Sweet, Sticky and Spicy Chicken

Nothing too noteworthy to report this week. I tried another chicken dish - Sweet, Sticky and Spicy Chicken (from allrecipes.com). This was an accidental slip back to the exotic dishes but I didn't realize it until I was at the grocery store getting ingredients. It came out pretty good - would probably have with rice next time but the mushrooms/green beans were good. I threw some brown sugar in w/the mushrooms and soy sauce - that was good - it was subtle but Holly noticed it... because she sneakily ate the rest of the mushrooms I was trying to save for the leftovers portion!! :)

Cooking Photos removed from Facebook

Just an FYI to all 2 of you who actually care - In order to simplify my weekly photo/blog management I deleted all of my cooking photos from Facebook this morning. From now on I will only spam them on my cooking blog site. And of course they'll remain viewable to anyone at the direct link at Flickr as well.

Trying a less exotic dish

After cooking various seafood and Chinese food dishes over past few months I figured I would try something a bit less "exotic" and see if it would still be a rewarding (and yummy) experience. So this week's Saturday night meal was [Bourbon Pecan Chicken]. I'm not sure I cooked it 100% correctly (mainly because my breadcrumbs/pecans didn't stick very well to the chicken) - but I thought it went pretty well!

I was going to serve with two sides (mushrooms and green beans) but I got a bit overwhelmed (and short on time) so I just make a larger serving of green beans (and almonds/maple syrup). My favorite part of the meal was the fact that the green onions finally came out like I want - nice and green!

I'm sure Holly was annoyed with me but as we were eating I kept saying to myself "Wow... this is really tasty!" I was just surprised that a non-exotic dish could actually be tasty.

Wasabisoy Almonds - best almonds on the planet!

 These are the best almonds on the planet! I can't go back to eating regular almonds now! 



And yes, I actually created this blog just to post a picture of these almonds... (since Google doesn't have a picture of them yet. BUT... I do like to cook so I'll use this blog seriously too... when time permits.
